Fish ceviche with 1642 Yuzu

Ingredients

  • 300 grams Halibut (or other white fish) In thin strips
  • 1/4 red onion In thin strips
  • 1/4 Cucumber In thin strips
  • A few chopped basil leaves
  • A few strips of red pepper In thin strips
  • The juice of 1 to 2 limes
  • 250ml Yuzu Drink 1642
  • 1/2 Avocado In thin strips
  • 1/2 Cup Popcorn (popcorn)
  • 4 to 5 grapefruits supremes
  • Salt pepper

Preparation:

  1. In a container, add the fish, red onion, cucumber, red pepper and basil. Add the lime juice, then about 75 ml of the Yuzu 1642 drink.
  2. Season well, then leave to cool for ten minutes.
  3. Meanwhile, cut the avocado into strips, pop your corn kernels, take 4 to 5 grapefruit supremes and cut them into strips.
  4. Bring the rest of the Yuzu drink to a boil, then simmer over medium heat, until the drink has reduced to a syrupy consistency. Keep this, it will be your Yuzu caramel!
  5. After 10 to 15 minutes, take the fish out of the fridge and it's dressing time!
  6. Drop the flat avocado and fish off your plate to your guide, then garnish with the onion, cucumber and chilli which were all in the marinade.
  7. Add some grapefruit supremes, popcorn and a few basil leaves.
  8. Add the Yuzu caramel, then adjust the seasoning.
