- In a small saucepan, bring the water and honey to a boil. Reduce heat and simmer, stirring, for 3 minutes or until liquid is clear and syrupy. Pour into a measuring cup and let cool.
- Add 1642 tonic and Oshlag Dentdelion gin. Place 2 thin slices of Lebanese cucumber or orange in each popsicle mold and pour the gin mixture to within 1/4 inch (5 mm) of the edge. Insert a stick in the center of each mold.
- Freeze for 8 hours or until popsicles are firm. When ready to serve, unmold the popsicles by quickly passing the molds under lukewarm water.
